Its origins are to be found in the Este tradition; it is one of the most renowned and precious dressings in the world, so much so that it has recently obtained the very prestigious DOP brand (designation of protected origin).
Our Traditional Balsamic Vinegar of Modena can be considered unique in its kind, since Acetaia Guerzoni has been, from its origins, fed only with organic and biodynamic grapes. It is produced from the aging of acetified cooked must only contained in barrels, all rigorously different from each other both in type of wood and size; in this company, thanks to a scheme of biodynamic derivation according to which each barrel is linked to a planet of the solar system (Moon-cherry, Venus-acacia, Mercury-mulberry, sun-Ash, Mars-oak or Oak, Jupiter- maple or chestnut, Saturn- juniper or chestnut), Traditional Balsamic Vinegar of Modena follows an absolutely particular maturation path, up to 24 years long, which gives it unmistakable properties and aromas.
Before being bottled, the Vinegar is subjected to scrupulous checks by the Tasting Commission at the Modena Chamber of Commerce, concerning both the characteristics of density and acidity and an organoleptic analysis of the product, and once all of these have been acquired, it also acquires the prestigious name of Traditional balsamic vinegar of Modena; to further guarantee the consumer, the Consortium of Manufacturers provides for the bottling of the product lot within the Chamber of Commerce itself.

Biodynamic farming is a holistic approach to agriculture in which vitality has the highest priority. Its origin lies in the agricultural course held by Rudolf Steiner in 1924. Demeter is the international logo of certified biodynamic food that you will see on packaging in shops and supermarkets, in farm shops, and at farmers' markets selling biodynamic food. It is the world's oldest certification mark, and is your guarantee of high quality food, wine and products farmed and produced to the highest standards.
Our history begins with our grandparents Arduino and Zina. After many years working in the lower Modenese countryside, they purchased with their lifesavings a cottage surrounded by a vineyard.
In the 1970s, their son Felice and his wife Iride converted the vineyard to organic and biodynamic. This was considered madness at the time; however, their profound respect for nature helped them overcome all challenges.
At the beginning of the 1980s, our farm followed German biodynamic policies. Italy had yet to distribute organic certification, so our certification was granted by a Germany controlling body (Demeter). In the same years, we began to produce traditional balsamic vinegar from Modena.
Nowadays, our vinegar company is the only one in world to be certified organic and biodynamic.
This is perhaps one of our greatest prides.
